  • 200 ยพ g fresh strawberries, hulled and sliced
  • 240 ยพ ml full-fat coconut milk
  • 2 ยพ tbsp honey or maple syrup
  • 1 ยพ tbsp fresh lime juice
  • 120 ยพ ml sparkling water
  • 1 ยพ cup ice cubes
  • 4 ยพ fresh mint leaves
  • 1 ยพ tsp vanilla extract

    Add the sliced strawberries, lime juice, honey, and vanilla extract to a blender. Blend until completely smooth, about 30 seconds.

    ๐Ÿ’ก Taste the puree and add a little more honey if your strawberries are not very sweet.

    Strain the strawberry mixture through a fine mesh strainer into a bowl or pitcher, pressing with a spoon to extract all the juice. Discard the seeds and pulp.

    Whisk the coconut milk in a bowl until smooth and pourable. If it has separated in the can, stir it well before using.

    Fill two tall glasses with ice cubes. Pour the strawberry puree over the ice, filling each glass about halfway.

    Gently pour the coconut milk on top of the strawberry layer. Let it settle naturally to create a beautiful gradient.
