Cucumber-Lime Agua Fresca

- 2 ¾ English cucumbers, roughly chopped (skin on)
- 80 ¾ ml fresh lime juice
- 1 ¾ tsp lime zest
- 3 ¾ tbsp honey or agave syrup
- 720 ¾ ml cold water, divided
- 1 ¾ pinch fine salt
- 10 ¾ fresh mint leaves
- 2 ¾ cup ice
- 4 ¾ slices cucumber slices, for garnish
- 4 ¾ lime wheels or wedges, for garnish
- 4 ¾ sprigs fresh mint sprigs, for garnish

Rinse the cucumbers well. No need to peel English cucumbers — the skin blends smoothly. Roughly chop into chunks. Precise cuts are not needed.

Add the cucumber chunks, lime juice, lime zest, honey, salt, and 360ml of the cold water to a blender. Blend on high for 45 to 60 seconds until completely smooth and pale green.
💡 Blend in two batches if your blender is small or less powerful — it gives a cleaner result. -

Pour the blended mixture through a fine mesh strainer into a large pitcher. Press the pulp gently with the back of a spoon to extract all the liquid. Discard the pulp.
💡 This step is what makes the drink glass-clear and smooth. Do not skip the straining — it makes a real difference in texture. -

Stir in the remaining 360ml of cold water. Taste and adjust — add more lime juice for brightness, more honey for sweetness, or a tiny extra pinch of salt if the flavor needs lifting.
💡 Cucumber sweetness varies by season. Always taste and adjust before serving. -

If using fresh mint, add a small handful to the pitcher and let steep for 5 to 10 minutes. Remove the mint before serving.
💡 Steeping longer than 10 minutes can make the mint flavor too strong. Taste as you go. -

Fill glasses with ice. Pour the agua fresca over the ice. Garnish each glass with a thin cucumber slice, a lime wheel, and a sprig of fresh mint. Serve immediately.
💡 Press a thin cucumber slice against the inside of a clear glass before adding ice — it looks like a proper crafted drink.
